I got to see one of my grandma's friends this weekend at my cousins wedding. It was one of the hightlights of the night to see her! Her name is Evelyn Meece and she's famous for a couple reasons. 1. she was part of my grandmas lunch bunch, it was a cute group of grammies that went to lunch every so often and prayed for each other, laughed with each other, just shared in each others lives. 2. Evelyn is famous for what we call Evelyn Meece Soup. Anytime there's a new baby, someone sick or when I tried it for the first time, when there's a death in the famil, Evelyn brings her soup. When my grandmother passed away we were all pretty beat down. for a family that cooks together (and eats together) to have the stoves off, you know we were in a bad state. Well, Evelyn showed up at Grandma and Grandpas with a HUGE pot of soup for us and man did we eat! then a month later when my Papa passed away, yet again, here comes the soup. it was and is my extreme comfort food now. I don't have the recipe with me today but I'll give it a try...
Thanks Evelyn for teaching me great tender care to those in need! it was so nice to see you Saturday!
